
Hikers Coffee Co is a family-owned and operated coffee shop and ice cream parlor in New Mexico. Against many odds, we moved to this beautiful state and opened our business during the Covid Pandemic. Our wild journey began on June 24th, 2014, when Steven, Caitlin, and Austin embarked on a 12-day trek at Philmont Scout Ranch. Transitioning from the flatlands of Houston to the mountains of Northern New Mexico, we never imagined that this trip would pave the way for our future six years later. Two years after our trek, Caitlin and Austin gained invaluable experience working at Philmont in the backcountry for a combined eight seasons. In 2015, Steven and Aubrey trekked to explore more of the stunning mountains, while Melissa and Grace visited over the years. In 2019, Caitlin worked at Philmont in Cimarron, NM, while the rest of the family stayed home to work or finish school. Although Austin was busy attending nursing school and couldn't be at Philmont, she made several visits throughout the summer with Steven. During these visits to Cimarron, we found limited options for breakfast tacos or great coffee. It all began when Steven joked that if he returned one more time, he would move to Cimarron to open a taco truck. Three trips later, he felt called to open a coffee shop. In August, Steven and Austin made it a point to visit every shop in town, gathering feedback about the community's need for coffee and breakfast tacos. Time and time again, they received confirmation that both were in demand. Over Labor Day Weekend in 2019, Melissa and Steven met with a realtor to explore available locations for a coffee shop. After considering a few options, they placed a contract on a building, but unfortunately, it fell through. However, another opportunity arose with the old Art Gallery in Cimarron. Fast forward to February 28, 2020—papers were signed, bringing Hikers Coffee Co one step closer to reality. In early March, Melissa, Caitlin, and Austin moved into the building while Aubrey was away at school, and Steven and Grace remained in Houston. Just two weeks after settling in, Covid-19 hit, halting many plans. Despite the challenges posed by the pandemic, we persevered, focusing on painting, planning, and repurposing the space. After several months filled with hurdles and excitement, Hikers Coffee Co officially opened its doors on October 1, 2020. Throughout the past year, we’ve faced numerous challenges but have been blessed even more. Steven, Melissa, and the family are grateful to everyone who has prayed for our journey and offered their support. We believe that Hikers Coffee Co was inspired by our Lord and Savior, who has special plans for its future. Time and again, our Father has blessed us, provided hope, answered prayers, and has carried us through this endeavor. We cherish everything we have and the trust placed in us. This adventure has involved our entire family, with each member playing a vital role. We aim to offer you an exceptional cup of New Mexico coffee and a kind word. As we grow, we will continue to introduce additional coffee, food, and dessert options, and yes, someday, breakfast tacos!
